All of the wines from Emandare are 100% estate grown and dry farmed organically on our 8.5-acre North Cowichan vineyard. We are not certified organic but choose to farm this way because working along side nature is at the core of our wine growing philosophy. The vineyard is full of life and our goal is to capture a glimpse of this place in every bottle through old world, low intervention, natural wine making methods.
The 2016 Marechal-Cabernet Foch Is hand harvested and a field blend of 74% Marechal Foch and 26% Cabernet Foch grapes. The 2016 Growing season was long and consistently warm, which really captured and concentrated the ripe flavors that these varieties are so capable of. The Marechal Foch portion of this wine comes primarily from our oldest black of Foch vines (16years old). This has allowed a graceful maturity to the flavor profile in this wine. After being de-stemmed and lightly crushed, wild fermentation was allowed to take place naturally in neutral French oak puncheons. Aged for 12 months in neutral French oak barrels, this wine is unfined and unfiltered to create a bold and juicy expression of Emandare’s nature.
The inky color of this wine, seamlessly matches its bold flavor profile. A terroir driven wine with maturity beyond its years. Ripe black cherries, dried plums and wild black currents. Along with these fruit characteristics you will be pleasantly pleased with its earthy undertones of spiced herbs and cocoa flair. Pairs incredible with lamb, or sea salted dark chocolate dishes.
